There is something so wonderful about pancakes for breakfast. It might even make Mondays taste better for all of us at home.
There is something so wonderful about pancakes for breakfast, yet the mornings are hectic and busy, so it is easy just to reach for the box mix. And believe me, we all do it once in a while. But if one of your new year resolutions is to eat a little better, you might want to give it some thought when you grab that mix box from the supermarket next week.
Stop to think about it, what is really in that box?
The basic ingredients for pancakes are flour, sugar, baking soda, salt, eggs, milk and butter. But when you look at the mix box label the list is a little longer...
INGREDIENTS: ENRICHED BLEACHED FLOUR (BLEACHED WHEAT FLOUR, NIACIN, REDUCED IRON, THIAMIN MONONITRATE, RIBOFLAVIN, FOLIC ACID), SUGAR, DEGERMED YELLOW CORN MEAL, DEFATTED SOY FLOUR, PALM OIL, LEAVENING (BAKING SODA, SODIUM ALUMINUM PHOSPHATE, MONOCALCIUM PHOSPHATE), DEXTROSE, BUTTERMILK, SALT, DATEM, CALCIUM CARBONATE. * PARTIALLY PRODUCED WITH GENETIC ENGINEERING
The list is overwhelming to say the least. They have lost me on the degermed yellow corn meal to be honest. And what on Earth is DATEM?
So why not make your own boxed pancake mix? Not only the homemade mix will be much healthier, it is also easy to put together, and it ends up saving you money. You can store it in your pantry for it to be used within minutes on those crazy busy mornings.
So here is the ingredient list for your homemade pancake mix:
1 1/2 cups all-purpose flour or whole wheat flour (oat flour or buckwheat flour are excellent choices as well; feel free to experiment and mix and match)
3 1/2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
Put all the ingredients in medium size ziplock and mix well.
That's your own pancake box mix ready!
Now all you have to do in the morning is add 1 1/2 cups of milk, 1 egg and 3 tablespoons of melted butter (optional). Just make sure you write on the ziplock what you need to add to the mix.
Pour all the ingredients into a medium-size bowl. Add the milk, egg and butter if using. Mix well to combine.
You could also add some 70% dark chocolate chip to spice your pancakes up.
Pour 1/4 cup of pancake batter onto the pan over medium heat and wait until bubbles form to flip. Serve with fruit and natural honey, yogurt or anything else you prefer.
